And then there’s ginger – grown across the island and prized for both its flavour and its soothing qualities. Recipe: Mango, Lime & Ginger Glazed Salmon
This recipe shows just how versatile the chutney can be – turning simple salmon fillets into something special.

Ingredients:

4 salmon fillets

1 tbsp soy sauce

1 tbsp olive oil

Juice of ½ lime

Fresh coriander or spring onions, to garnish
Method:

Preheat your oven to 200°C (180°C fan). Line a baking tray with parchment.

In a small bowl, mix the chutney, soy sauce, olive oil, and lime juice.

Place the salmon fillets on the tray and spoon over the glaze, coating each one generously.

Roast in the oven for 12–15 minutes, until the salmon is cooked through and the glaze is bubbling and caramelised.

Garnish with fresh coriander or spring onions and serve with rice, roasted vegetables, or a crisp green salad.
