Recipe: Caramelised Onion & Goat’s Cheese Tart
Serves 4 | Prep 10 mins | Cook 25 mins
Ingredients:
● 1 sheet of ready-rolled puff pastry
● 3 tbsp Pimento Hill Caramelised Red Onion Chutney
● 100g soft goat’s cheese
● 1 red onion, thinly sliced
● 1 tbsp olive oil
● Fresh thyme leaves
● Salt and pepper, to taste
Method:
1. Preheat the oven to 200°C (180°C fan).
2. Gently fry the sliced red onion in olive oil until soft and golden.
3. Place the puff pastry sheet on a lined baking tray and score a 1-inch border around the
edge.
4. Spread a generous layer of Pimento Hill Caramelised Onion Chutney inside the
border.
5. Top with the softened red onion and crumble over the goat’s cheese.
6. Sprinkle with thyme leaves, salt, and pepper.
7. Bake for 20–25 minutes until golden and crisp.
8. Serve warm with a crisp green salad — simple, elegant, and full of flavour.
