Corn and kidney bean salad
16 ounces cooked corn kernels
16 ounces cooked kidney beans
¼ cup diced red onions
¼ cup diced red yellow and green bell peppers
3 tablespoons honey
2 teaspoons finely chopped garlic
3 tablespoons Pimento Hill Mango Natty
2 tablespoons apple cider vinegar
Chilli to taste (optional)
Pinch of salt
4 lime wedges
Rinse and drain all kidney beans and corn and place in a large bowl
In a small pan mix honey, chilli, Pimento Hill Mango Natty, garlic salt,
Add to the bean mix and stir well.
Add red onions. Mix some more. Then add chopped parsley.
Use the wedges to decorate.
Leave at room temperature for about 20 mins before serving
